Trust me on this one.

I totally stole this recipe from my friend Melanie, so I cannot take credit but HAD to pass it on. Just a little warning...you may want to hit the treadmill after this one, but it's soooo worth it.

I threw a little birthday dinner party for my mom last weekend and made an *onion souffle* as an appetizer. It was the easiest thing and SUCH a hit. Of course, being the busy crazy person I was that night I didn't take a picture. But - if you need an appy idea that is quick/easy/a crowd pleaser, here you go!


Onion Souffle

3 (8 oz) pks cream cheese (room temperature, or I have put it in microwave b/c it's hard to mix)
1 small white onion (chopped)
2 cups shredded parmesan cheese
1/2 cup Hellman's mayonnaise

Mix together. ~Bake 425 for 20 - 30 minutes in a 9x9 (or so) or until brown on top. Serve with wheat thins or any type of cracker.

I am NOT a fan of onions or mayo, but you can't taste either. It just tastes like bubbly cheesy goodness.
